WINEMAKING
The grapes are hand-picked in early September. In the cellar the grapes are
de-stemmed and gently pressed. The must is kept at 10° C for 16 hours, for a natural clarification. It is racked into stainless steel tanks at a controlled temperature, where it ferments at 16° C. The wine is aged for 90 days in an autoclave with the Charmat-Martinotti sparkling method.
TASTING NOTES
Its colour is bright yellow with green nuances and a fine and persistent bead. On an olfactory level it presents a blend of fruity and fresh floral sensations. The taste is pleasant and delicate. It is ideal with fish dishes and at its best with stuffed olives (all’ascolana).
