Born from a personal challenge to produce a traditional method in the Marche region.

Grapes: 80% Chardonnay; 20% Pecorino
Production area: Campofilone. We are in the heart of the Val d’Aso. Altitude of 250m above sea level

Vinification: the method used is the Traditional Method.
The Chardonnay and Pecorino grapes, with their rich aromatic heritage and pronounced acidity, are particularly suitable for sparkling wine production using the Traditional Method. From fermentation at controlled temperatures, followed by a secondary fermentation in the bottle according to the traditional method, aged on selected yeasts (liqueur de tirage) for 36 months, a very fine wine is born.
The result is a sparkling wine with a fine and persistent perlage, creamy and satiny, with intoxicating and engaging aromas, creating an expectation that is not disappointed, but rather, encourages further drinking.

BRIGHT YELLOW, fine and persistent perlage. On the nose, it presents itself as intense, fine, fragrant with hints of acacia, white fruit, and notes of cedar. Freshness and sapidity are enhanced by the tantalizing effervescence on the palate.
Timeless pairing with Ascolana olives and any type of fried food. Excellent with cold cuts and fresh cheeses.
The bottle should be kept in a horizontal position in a preferably dark environment, away from noise, with a temperature between 12 – 18 degrees and humidity around 60-70%.
